Spinach

Looking for a vegetable to serve at your holiday gatherings? Spinach is a versatile vegetable that can be dressed up or down for holiday entertaining and wholesome family meals. Plus, spinach has many of the nutrients that your preschooler needs. Just 1/3 cup of chopped, cooked spinach is an excellent source of vitamin A, magnesium, and folic acid and a good source of calcium and iron for preschoolers. Remember, that vitamin C helps the body absorb iron and eating foods rich in vitamin C with spinach is a good idea.

How your preschooler can help

Look at different types of spinach at the store. Let your preschooler tell you the differences she sees between regular spinach and baby spinach, and what is the same. Next time you make homemade pizza, your preschooler can arrange baby spinach leaves in a fun pattern.

Simple Spinach Tastes

Steam or boil spinach until just cooked. The bright green color is appealing and the texture will be soft. Chop into bite size pieces and squeeze on some lemon juice before serving. Spinach also mixes easily into many family favorites – pasta sauce, chili, scrambled eggs, and even ground turkey for tacos. Just chop the spinach very fine and stir some in during cooking.

1 package (12-oz.) STOUFFER'S Creamed Spinach, prepared according to package directions 1 can (16-oz.) ORTEGA Refried Beans

COMBINE creamed spinach and beans. Cool; serve with pita bread slices or tortilla chips, if desired.


Keep these ingredients on hand for an easy lunch or snack. This dip is both quick and tasty. Serve with cooked vegetables or whole wheat pita bread slices.

Ingredients
Nonstick cooking spray 1/2 cup part-skim ricotta cheese
1 package (10 oz.) whole-wheat 6-inch tortillas 1/2 cup (2 oz.) shredded Swiss cheese
1 can (12 fl. oz.) NESTLÉ® CARNATION® Evaporated Lowfat 2% Milk 1/4 teaspoon salt
1 cup egg substitute or 4 large eggs 1/4 teaspoon ground black pepper
1 cup chopped baby spinach leaves

PREHEAT oven to 350° F. Spray 10, 2 1/2-inch muffin cups with nonstick cooking spray. Soften tortillas by heating in microwave on HIGH (100%) power for 10 seconds. Press tortillas into muffin cups to form quiche crusts.


WHISK evaporated milk, egg substitute, spinach, ricotta and Swiss cheeses, salt and pepper in medium bowl until blended. Spoon about 1/2 cup of mixture into prepared quiche bases, dividing evenly. Stir mixture frequently to evenly distribute ingredients.


BAKE for 30 to 35 minutes or until knife inserted near centers comes out clean and tortilla edges are lightly browned. Cool in pan for 5 minutes. Carefully remove quiches. Serve warm.


TIPS:

  • 1/2 cup finely chopped ham maybe added to the milk mixture.
  • Quiche cups can be made ahead and frozen. To reheat, place on baking sheet and bake in preheated 325º F oven for 25 to 30 minutes or, place in 2 to 4 quiche cups on microwave-safe plate and microwave on MEDIUM-HIGH (70%) power for 2 1/2 to 5 minutes or until hot.
