Healthy Eating Habits
Take a fresh look at this year-round favorite fruit. Apples are a healthy and delicious food that can be served at snack time or included in meal time offerings. One half of a small peeled apple, cut into 1/4" dices is about 1 preschooler serving of fruit (1/3 cup). Remember that preschoolers need 1 cup of a variety of fruit each day. Strive for the colors of the rainbow in the fruit and vegetable offerings that you give your preschooler.
Apple Graham Yogurt Parfait
Serve up some “cooking” at your next play date. Your preschooler and his friends can make these parfaits for a snack or as part of a lunch. Let the preschoolers smash and crumble GRADUATES Animal Crackers in a zip top bag. Give each child a GERBER Yogurt Blends Snack in a small bowl. Serve diced apples and the crumbled crackers family style, letting each child spoon their desired amount into their yogurt snack.
Baked apples (Only adults should prepare this recipe)
6 baking apples, 1 cup raisins, 1 tsp cinnamon, 1 1/2 cups cranberry juice
Preheat oven to 350. Wash and core apples. Remove peel from around the top. Place apples in baking dish. Combine cinnamon and raisins in a small bowl. Fill each apple with raisins. Pour juice around apples. Cover loosely with foil. Bake for 35 min. Uncover. Bake 10 min more or until tender. Serve warm (not hot), sliced to bite-size pieces.
COMBINE corn meal, apple, honey and salt in medium bowl. Slowly stir in boiling water. Cover; let stand for 10 minutes. Stir in flour, baking powder and cinnamon just until blended.
COMBINE egg and evaporated milk in small bowl; add to corn meal mixture. Spoon 1/3 cup batter for each pancake onto heated, lightly greased griddle or skillet; cook for about 1 minute or until bubbles appear. Turn; continue to cook for 1 to 2 minutes or until golden. Repeat with remaining batter. Serve warm with maple syrup.
Recipe makes 8-10 pancakes

COMBINE Apples and cinnamon in small bowl.
PLACE cheese strips on outside perimeter of 4 slices of bread. Spoon apple mixture evenly into centers of each. Top with remaining slices of bread; press down slightly. Brush sandwiches with butter.
BROIL on each side until golden brown and cheese is melted.
Recipe makes 4 servings.
