Pumpkin Spice Mini-Breads

Yields 8 mini loaves

Serving size 1 slice, roughly 21-28g

Dig into parent-friendly fall flavors the whole family will enjoy! Just cut these into mini slices for your little one—and top with pumpkin spice yogurt for an extra-special snack.

Ingredients:

  •        1 cup whole wheat flour
  •        ¾ cup Gerber® Oatmeal Cereal
  •        ½ tsp pumpkin spice
  •        ½ tsp cinnamon
  •        1 tsp baking powder
  •        ⅛ tsp salt
  •        (2) 4-oz packs Gerber® Pumpkin puree
  •        1 cup milk of choice
  •        1 large egg
  •        1 tsp vanilla
  •        2 dates, pitted
  •        ¼ cup unsalted butter, melted

Directions:

1.     Preheat oven to 350° F. Coat an 8-loaf mini bread pan in a thin layer of oil.

2.     In a medium bowl, whisk dry ingredients: flour, cereal, spices, baking powder, and salt.

3.     In blender, combine wet ingredients: puree, milk, egg, vanilla, dates, and butter.

4.     Pour wet ingredients over dry ingredients and gently whisk until just combined. 

5.     Spoon dough into pan, about ½ cup per mini-loaf.

6.     Bake for 20 minutes, until toothpick inserted in center comes out clean. Cool completely.

7.     Store in an airtight container in the fridge for up to one week, or freeze for up to six months.
