

Both parents and little ones will love these as a nutritious breakfast or afternoon snack.
Yields 24 mini muffins
Serving size 1 muffin,cut in half
Ingredients:

(2) 4oz Gerber® Banana Puree
-
1 large egg
-
1 tsp vanilla extract
-
¼ cup unsalted butter, melted
-
1 cup milk of choice
-
1 cup whole wheat flour
-
1 tsp baking powder
-
1 tsp cinnamon
-
⅛ tsp salt
-
Optional: 1 pouch Gerber® Yogurt Melts® of choice
Directions:
1. Preheat oven to 375° F. Grease or line a mini muffin pan.
2. In a medium bowl, mix wet ingredients: puree, egg, vanilla, butter, and milk.
3. In another medium bowl, whisk dry ingredients: cereal, flour, baking powder, cinnamon, and salt.
4. Slowly add dry ingredients to wet ingredients, mixing until just combined.
5. Spoon into pan, filling each cup to the top.
6. Bake for 15-17 minutes, until toothpick inserted in center comes out clean. Cool completely.
7. Cut into portions appropriate for your baby’s age, and top with Yogurt Melts® if desired.
8. Store in an airtight container in the fridge for up to five days, or freeze for up to one month.
